By default, when you close pidgin, it parts all the channels before disconnecting, which defeats the whole purpose of using a bouncer.
It's because pidgin sucks as IRC client, and you should switch to some better client.

As a workaround, you can try [[stickychan]], or add all channels to "favorites" in pidgin.

Connecting

Connections to ZNC using SSL:

  • Accounts
  • Manage Accounts
  • Add...
  • Protocol: IRC
  • Server: example.com
  • Password: username/network:password
  • [Check] Remember password
  • Advanced Tab: Add SSL port and [check] Use SSL.
  • Save

Troubleshooting

It does not connect.

If port 6697 is the SSL port, you need [Check] The Use SSL in the Advanced Tab.

This is a failed attempt due to not [Check]'ing the Use SSL.

Lost connection with server: Remote host closed connection.

Further Debugging/Troubleshooting can be done by opening the debug window: Help -> Debug Window

Non SSL

This is for plain non-ssl connections.
